It is made on rye, one of the most popular sandwich bread. The rye balances the salty, cured beef with tart sauerkraut, mild, almost creamy, melted Swiss. Russian dressing is another great option.

Good Reubens should be loaded. We can guarantee that this one is! You can make your own Russian dressing or purchase ready-made. But you must use plenty! This is the glue that holds this fantastic sandwich together.

Ingredients

  • 2 tablespoons butter
  • 8 slices of rye bread
  • 8 pieces of deli sliced corned meat
  • 8 slices of Swiss cheese
  • 1 cup sauerkraut, drained
  • 1/2 cup Thousand Island dressing

Directions

  • Heat a large skillet or griddle on medium heat.
  • Butter one side of each bread slice lightly. Spread Thousand Island dressing on the sides of non-buttered bread. Layer 1 slice of Swiss cheese, 2 pieces of corned beef, 1/4 cup sauerkraut, and the second slice of Swiss Cheese on 4 bread slices. Cover remaining bread slices with butter, and then top it off.
  • Grill sandwiches for 5 minutes on each side. Serve immediately

My preference is rib eye, which has better marbling but is more expensive. A top round is also an option for a cheesesteak. Avoid using brisket or flank steak. The final sandwich will be very chewy.

You have two choices: Cheez Whiz or provolone. This is a shelf-stable cheese product that comes in jars. American cheese can be quite delicious if I am being truthful. But let’s not forget the classic cheese.

I prefer to use both. When the steak is done, I spread some provolone on it and drizzle some Cheez Whiz over it. The Cheez Whiz texture and the rich flavor of the provolone make this sandwich my favorite. Provolone is sharper than Cheez Whiz, while Cheez Whiz has a creamy texture that resembles nacho cheese.

It can be made however you want. You can use either one or both.
